What we use in our bar for sweet and sour:
3 parts Water
3 parts Sugar
2 Parts Lemon Juice
2 Parts Lime Juice
Stir water and sugar together in a saucepan over medium heat untill the sugar is disolved (basic simple syrup recipie). Remove from heat and add the lemon and lime juice. Stir and refridgerate. It is safe to use for about a week.
I prefer using fresh juice, as the bottled stuff takes on an odd "sulfer" flavor. That's just me though.
As for other mixes:
I have been adding a little mint and vanilla to the simple syrup as it cools for a nice Mint julep base (just add Ketucky Burbon and some more mint).
Pina Colada mix:
3 1/2 Cups of Unsweetend Pinapple Juice
8 ounces of Cream of Coconut
Mix together in a pour and serve. When you make the Colada, just add rum and Ice. Blend or serve on the Rocks.
Bloody Mary Mix:
1 quart of good Tomato Juice (not V
6 oz Worcestershire (6 - 1 oz shots)
1 teaspoon Tobasco
2 teaspoon Salt
1 teaspoon Black Pepper
1 teaspoon White Pepper
2 teaspoon Celery salt
1 minced clove of garlic
2 Tablespoons of A1 Steak Sauce
1 tablespoon of horseradish
1 oz of Lemon Juice
1 oz lime Juice
1 teaspoon of Angoustoura bitters
Mix it all together in a large container and store in Pour and Serves. The Mix will be good for about a week.
It seems like a lot of stuff, but it creates a full bodied Bloody Mary or Maria, with a lot of flavor depth and texture. I serve this garnished with a pickled asparagus spear. _________________ The odds are good but the goods are odd.
